Cintli combines indigenous recipes from my childhood in rural Mexico, on my grandfather's self-sustaining farm, with small plates and finger foods traditionally served at old-style Mexican cantinas. The centerpiece and heart of our menu is the corn tortilla, made from scratch and pressed to order. Cintli (seen-tlee) means "corn" in the native Nahuatl language of central Mexico, where I grew up. At Cintli, we use only 100% hormone, steroid, and antibiotic-free meat, MBA-certified seafood, and non-GMO produce. We source our ingredients locally, with a few notable exceptions brought directly from Mexico, such as the chiles, cactus, huitlacoche, and toasted grasshoppers (chapulines). Everything on our menu is meant to be shared amongst family and friends while sipping on scratch-made aguas frescas, fresh-squeezed cocktails, or an ice cold cerveza - the cantina way.
